If an EV replaces a gas car the net change in Electrical power demand is zero. It takes the same electric energy to refine 4 gallons of gas as it does to drive an EV 100 miles.
Also LFP batteries are becoming dominant, cheaper and easier to find iron and phosphate.
Finally battery tech like Influit Energy is likely to replace current battery technology with cheaper, easier to source materials. Yes not in production yet but there is $Trillion market prize inspired by current EV sales. That is the many alternative batteries with less cost and more performance, at least one is likely in next 10 years.
